Flautas de Papa

Flautas are a classic, delicious Mexican dish and, while a bit involved, are not too difficult to prepare. One thing’s for certain, no matter the amount of work it’s going be worth it with this meatless alternative. 

First thing’s first: Let’s get our ingredients together! 

INGREDIENTS

  • 1 1/2 Pounds of Whole, Unpeeled Potatoes

  • Salt

  • Ground Black Pepper

  • 1/2 Cup of Vegetable Oil

  • Corn Tortillas

  • 2 Cups of Shredded Lettuce

  • 1/3 Cup of Cotija Cheese

  • 1/2 Cup of Mexican Crema

  • Salsa (Optional)

PREPARATION

Step 1. Pull out your instant pot, place your whole, unpeeled potatoes inside with enough water to cover them completely. Once the potatoes are covered in water add about 1/2 teaspoon of salt. Place the lid on your instant pot and set the valve to sealed. Cook on manual for 8 minutes.

Step 2. Once the timer goes off you will need to drain the potatoes and then return them back to instant pot with the power off.

Step 3. Season with salt and pepper and then mash you potatoes with a potato masher or whip them with a handheld mixer.

Step 4. Now, we must heat the vegetable oil in a large skillet over medium-high heat. In the meantime we can begin heating our tortillas on another open skillet (note: this will make the tortillas easier to roll).

Step 5. Based on the size of your tortillas you’re going to want to place about 3 to 4 tablespoons of mashed potatoes on a tortilla and and roll the tortilla tightly.

Step 6. Place the rolled flautas in the skillet and cook for about two minutes per side or until golden and crisp. Remove the flautas and place them on a paper towel-lined plate.

Step 7. Garnish with the shredded lettuce, cotija cheese, Mexican crema, and salsa.
