Oven-Roasted Elote-Style Carrots

Who doesn’t like trying something new? I’m sure a lot of folks, but if you’re looking at this recipe then you are certainly not one of them!

We’ve got a delicious recipe for you today: Oven-roasted elote-style carrots. That’s right, elote-style, which means cotija cheese, jalapeños, chili powder, and a flavor you won’t forget!

First thing’s first: Let’s get our ingredients together!

INGREDIENTS

  • 1 1/2 Pounds of Medium-Sized Carrots

  • 3 Tablespoons of Olive Oil

  • 1/2 Teaspoon of Chili Powder (Or to Your Discretion)

  • 1/2 Teaspoon of Cumin

  • 1/3 Cup of Lime Juice

  • 1 Jalapeño

  • 2 Cloves of Garlic

  • 2 Teaspoons of Honey

  • 1/2 Cup of Cilantro

  • 2 Ounces of Cotija Cheese

  • Salt (To Taste)

  • Pepper (To Taste)

PREPARATION

Step 1. Preheat your oven to 450º F

Step 2. Peel your carrots and cut them in half lengthwise.

Step 3. Arrange your carrots on a baking sheet and coat with olive oil, then toss the carrots with your chili powder and cumin; add salt and pepper as you see fit.

Step 4. Thinly slice your jalapeño and mince your garlic.

Step 5. Combine the lime juice, jalapeño, garlic, and honey in a small bowl; add salt and pepper to taste.

Step 6. Let your carrots roast for 15 to 20 minutes until tender.

Step 7. Place your carrots on your serving platter and then coat with your sauce; sprinkle with cilantro and your cotija cheese.

Step 8. Enjoy!

We served our oven-roasted elote-style carrots with some of La Carreta’s jalapeño-stuffed pork chops and the meal did not disappoint! Get creative with your main dish and taste how the flavors from the carrots bring it all together.
